Liquid gold. Really. This single-variety ice cider is made using the Northern Spy apple, a famous NY early-1800s variety prized for baking. Its zingy acidity and apple pie spice flavors make it one of the few single-variety ice ciders that stand up to barrel-aging.
In this case, we use top-of-the-line French oak Chardonnay barrels, which bring just a hint of vanilla and toffee to round out this spectacular ice cider.
Naturally cold-concentrated before fermentation in our Vermont winter weather. Arrested fermentation leaves residual sweetness.
Tasting notes: Baked apple, autumn spice, vanilla caramel.
Pairing suggestions: Enjoy with cheese, maple crème brulee, or butter cookies.
Gluten-free, vegan-friendly.

Our flagship ice cider is made with 15 heirloom apple varieties, all grown in Vermont. The combination creates a beautifully textured, still, sweet dessert-style cider that is elevated by a backbone of bright acidity.
Naturally cold-concentrated before fermentation in our Vermont winter weather. Arrested fermentation leaves residual sweetness.
Beautiful balance of sweetness, acidity, and fruit with notes of apple compote, pineapple, citrus, and turbinado.
Pairing suggestions: apple pie, creme brûlée, or a cheese board.
