Chocolate Shop Chocolate Red Wine

Sweeting the tongue for centuries, chocolate and red wine has been the most reliable pairing in history. Washington’s Chocolate Shop takes this pairing to the next level, marrying chocolate flavor with red wine to create a sumptuous drink.
“We start with a proprietary red blend of the finest vinifera varietals (mostly Merlot), add a touch of oak and a kiss of sweetness to create the perfect fruit-driven foil for the rich dark chocolate, which unfolds in silken layers across the palate.”
Owen Dugan, Wine Spectator: “The nose carries the cherry motif, with a little kirsch. The first time you taste it you will smile a little as the surprise of chocolate unfurls.”

Elderberry Honeywine
Elderberry Honeywine

“This elderberry honey wine shows significant complexity and is more like grape wine than our other varieties. It has been referred to as “instant port” by numerous tasters. Our winemaker enjoys Elderberry Honeywine by itself or with a splash of blackberry grappa or brandy. We have found that our Elderberry Honeywine stays fruity for 1 -2 years, and matures well for 3-6 years.” Serve chilled. Certified Kosher OU.

“Like cherry pie, this is our sweetest variety. Try it chilled before or after dinner, or with creamy (non-blue) cheeses and crackers. Try simmering it with pear slices or mix it into whipped cream icing. This wine tastes fruity for the first 6 months to 1 year (longer if kept cool) and is exquisite when aged 3-4 years.” Certified Kosher (OU).

“Great blackberry wine with a kiss of honey. Try it chilled before or after dinner, with dark chocolate, cheesecake, or as a complement to a sunny beach. Our Summer favorite: put ice and strawberries in the blender, cover it with Blackberry Honeywine, blend, and serve. This berry wine should retain its fruity flavor for 6 months to a year, or longer if kept cool. We have enjoyed bottles of 3- and 4-year-old blackberry honey wine — it matures into wine that is less fruity and more port-like.” Certified Kosher (OU).

Clear Creek Cranberry Liqueur
Clear Creek Cranberry Liqueur

Oregon cranberries are grown by dedicated, enthusiastic farmers along the southern Oregon coast. They are big cranberries with intense flavor and color. A savvy grower from Bandon persuaded us to create a liqueur with this beautiful fruit, and we are very pleased with the results. This liqueur is entirely true to the fruit: dark red, tart, lightly sweet, and very fruity.

Northern Spy Barrel-Aged Ice Cider by Eden Specialty Ciders
Northern Spy Barrel-Aged Ice Cider by Eden Specialty Ciders
Thursday, December 1, 2011
Liquid gold. Really. This single-variety ice cider is made using the Northern Spy apple, a famous NY early-1800s variety prized for baking. Its zingy acidity and apple pie spice flavors make it one of the few single-variety ice ciders that stand up to barrel-aging.
In this case, we use top-of-the-line French oak Chardonnay barrels, which bring just a hint of vanilla and toffee to round out this spectacular ice cider.
Naturally cold-concentrated before fermentation in our Vermont winter weather. Arrested fermentation leaves residual sweetness.
Tasting notes: Baked apple, autumn spice, vanilla caramel.
Pairing suggestions: Enjoy with cheese, maple crème brulee, or butter cookies.
Gluten-free, vegan-friendly.
Currently available to the cider club only.
